To season the board properly, heat the mineral oil slightly and apply it in the direction of the grain of the wood with a clean, dry cloth. Let the oil soak and repeat with another application. Let the board dry and wipe off any excess oil.
Wash by hand with hot soapy water and dry them thoroughly. Do not soak or immerse the board in water and do not wash it in the dishwasher. Rub occasionally with a mineral oil safe for food to prevent the wood from drying out. To disinfect, wash the board with a solution of a part of vinegar with five parts of water.
Remove odours by rubbing the board with kosher or table salt and half a citron. Let stand for 2 to 3 minutes and then wipe with a damp cloth.Remove excess moisture with a clean paper towel and hold the board at the end to dry in the air.
